Had an amazing journey into the mountains and soaked in the springs. Not being Buddhist, I read that Bodhi day is celebrated in part with a meal of tea and cake: I celebrated with Coconut Lotus root Biscochitos (East meets Southwest - recipe follows, if you so desire...) and the thought of tea (the jar broke, unfortunately, before any tea could be enjoyed). The pools were ever clear and the air was fairly warm when the sun showed its face. The cave where the spring emerges was so calm and peaceful, and the water so warm. Beautiful day.
Coconut Lotus root Biscochitos
3 cups flour
1/2 TBS baking powder
1/8 tsp salt
3/4 cup coconut oil
1/4 cup butter
3/4 cup sugar
1 tsp anise seed
1 egg
1/2 tsp vanilla extract
1 lotus root, peeled and sliced thinly, boiled in water with lemon juice for 2 minutes
cinnamon and sugar to sprinkle on top

-Preheat oven to 350°
-Mix flour with baking powder and salt.
-In separate bowl, mix coconut oil, butter and sugar together. Add anise, vanilla and egg; mix well.
-Combine flour mixture with coconut oil mixture; add water as needed so dough sticks together.
-Roll out on floured surface and cut out cookies.
-Place cookies on baking sheet and top with a slice of lotus root. Sprinkle with cinnamon and sugar, if desired.
-Bake for 15 minutes; let cool before removing from pan (the coconut oil needs to cool down before the cookies will retain their shape well).
